Kofta Pita Sandwiches

Ingredients
  • 4 oz garlic and herb goat cheese, room temperature
  • 3 tbsp plain greek yogurt
  • juice of ½ lemon
  • ¼ cup plus 1 tbsp olive oil
  • ½ tsp salt
  • 4 whole wheat pita, sliced in half crosswise
  • 12 kofta (3 per person), sliced in half lengthwise
  • 2 tomatoes, sliced
  • ½ English cucumber, shaved or cut into slices
  • sliced red onion
  • chopped romaine
Instructions
  1. In a food processor, combine goat cheese, Greek yogurt, lemon juice, olive oil and salt. Puree until smooth. Alternatively this can be done using an immersion blender. Set up an assembly line with the sauce, pita, Kofta, tomatoes, cucumber, red onion and romaine.
  2. Slather the inside of the pita with goat cheese sauce. Take 3 halves of Kofta and place them in the pita, add a few slices of tomato, cucumber, red onion and chopped romaine. Drizzle the top with more goat cheese sauce. Repeat the process with the remaining halves of pita and serve.
